assorted things

In between other fun, I went apple picking this past weekend, so now I have a bunch of apples. Yum! Fresh off the tree!

Anyone have a recipe they like for apple pie filling that is suitable for freezing? (freezing for about a month so i can have homemade apple pie around thanksgiving)

It must be autumn. I'm having the urge to do fall baking. i have to try that yummy homemade oreo recipe again. I haven't made fudge to bring into work in far too long, too.


Also, anyone know of QA/automation-testing jobs in the Portland, OR area? an old friend of mine out there just got laid off. I don't believe she's looking to relocate.

I have recipe for caned apple pie filling. Apples are problematic for freezing,the cells just collapse.

Oh, you might be able to make the hole pie and freeze it off that way

Yeah, that's what I was going to suggest. Bake the pie, let it cool and store it in saran wrap wrapped in foil and it should be fine.

Also, if you make ANY of the above to bring into work, make sure James brings some home for me. :)

huh. i thought that the pastry dough didn't freeze well for more than a week. perhaps i'm thinking of the uncooked stuff?

I don't know; most pre-made pie crusts are frozen unbaked. I know most puff pastries don't freeze at all once they are baked. I've baked apple pies before and frozen them and they came out fine; so I'm not sure which is better.

Another alternative is to assemble the pie and freeze it unbaked (like they give you Mrs. Smith's pies and others unbaked but frozen).

Now I want to experiment.

Apples will store just fine in a cool, dark, bug-free place for a month and even longer. Short of that, I'd agree with the people who suggested making it into pies and freezing them unbaked, but it's probably easier to store whole apples. I think you will lose something if you cook the apples and store the result until pie time.
