three three three parties i've been invited to... and i'm feeling too under the weather to go to any of them. hopefully i'm not coming down with the Death Flu that's hit work.

ah well.

on the other hand, i did start the day with heavenly waffles i'd started last night (ceo's recipe for overnight waffles). i hadn't made the recipe before, and they came out great. mmmmm. fresh waffleses.

yay! glad they came out well!

I actually made the same thing this morning for [livejournal.com profile] mattlistener and [livejournal.com profile] mud_puppy, but used the recipe out of a recent Cook's Illustrated that called for refrigerating the better overnight. That worked well, though I deviated from that recipe in adding the eggs in the morning (with the whites beaten to soft peaks) like the original recipe says to do.

Is the recipe an easy one?

Hi, because I'm such a poor cook, I'm always on the lookout for good recipes that are easy to prepare. Does this recipe fall in that category? Is it one that you can share? Any tips?

well, you have to start them the night before, but it's pretty straightforward. here's the text of the recipe as i got it from ceo:

1/2 teaspoon instant yeast
2 cups all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
2 cups milk
1/2 cup (1 stick) butter, melted and cooled
1/2 teaspoon vanilla extract (optional)
2 eggs, separated
The night before, combine the dry ingredients and stir in the milk, then the butter and vanilla. Cover with plastic wrap and leave out overnight at room temperature. (Yes, overnight! That's why they're called "overnight waffles". You woke up this morning and started the recipe without reading it carefully, didn't you?)
Preheat the waffle iron and butter or oil it if necessary.
Stir the egg yolks into the batter.
Beat the whites to soft peaks, and fold them into the batter.
Pour a ladleful of batter onto the waffle iron and bake for 3 to 5 minutes, until steam mostly stops and waffle is golden brown.

Or you can change the name of the recipe to "Waffles for Dinner".... :-)

Sounds yummy. Can't wait to make them.
